2016 Denali Estate Cabernet Sauvignon

The 2016 growing season started with a temperate winter which brought on early bud break in our estate vineyard. Bloom followed shortly thereafter and veraison went all the way through by mid-July. Overall 2016 was marked by cooler temperatures, which allowed to the grapes to mature very evenly for an extended period without any erratic weather events such as heat spikes or rain forcing our hand to pick. The result in the glass is a classically styled and balanced Cabernet Sauvignon.

This wine displays a nearly opaque purple-garnet hue in the glass. Aromas of ripe blueberry, baking spices, tobacco and violet emerge from the glass in waves. The mouthfeel is marked by a mature, ripe tannin structure making for a sleek, creamy experience. Palate notes are marked by tobacco, black currant, brambly black fruit, lavender, mint, and mocha. This wine has a seamless trajectory loaded with complexity that will allow it to drink well for at least 15+ years.

Katherine’s Cuvée – 2011 Brut Champagne

An elegant, sparkling wine from the 1er Cru town of Vaudemange in Champagne, France.

Description
Katherine’s Cuvée is what as known as a Grower Champagne, one produced by the same estate that owns the vineyards where the grapes are grown. (Grower Champagnes are denoted by the “RM” on the label.) The grower and producer, Earl Francart Philippe, produces cuvées (aka sparkling wine blends) that reflect his family’s distinct vineyards and style.
Composition
A blend of Chardonnay and Pinot Noir, aged in the cellar for at least 4 years. Lively and elegant, ideal for an aperitif.
Dosage
Brut (dry), i.e. less than 12 grams of residual sugar per liter
Alcohol
12% ABV
Tasting Notes
Clear yellow hue with a golden tinge. Fine and delicate bubbles. White-fleshed fruit aromas with hazelnuts and almondson the nose. Citrus aromas give way to more evolutionary notes and elegance. A beautiful freshness in this Champagne.
Food Pairing
Pairs with veal chops, barded with bacon, with pan-fried chantrelles. Choose refined dishes.
Region
Located in Vaudemange, a small village located north east of France, the family vineyard is located at the foot of the Regional Park of the Montagne de Reims in a village classified 1er Cru. Thanks to its chardonnays, Vaudemange is part, with three other communes, of the soil nicknamed “Pearl White” of the Mountain of Reims. We bring our full awareness to the care of the vineyard and the work of the wine until the elaboration of champagne.

Description
Katherine’s Cuvée is a Grower Champagne, one produced by the same estate that owns the vineyards where the grapes are grown. (Grower Champagnes are denoted by the “RM” on the label.) The grower and producer, Earl Francart Philippe, produces cuvées (aka sparkling wine blends) that reflect his family’s distinct vineyards and style. Expressive aromas of strawberries and biscuity notes of dried fruit tease both the palate and the nose as this delightful champagne is enjoyed. Delicious with both soft and hard cheese and goes well with any brunch entree.
